Lemon

 The lemon is a small ever green tree native to Asia. The juice of the lemon is about 5% to 6% citric acid which gives lemon in sour teast. The origin of the lemon is unknown thou lemon are thought to have first grown in Assam, Northern Berma and China. The study of the genetic origin of the lemon reported is to be hybrid between better orange (sour orange) and citron. The lemon is an ever green tree, it blooms a white flower and produce fruit all year round. Each tree can produce between 500 and 600 pounds (225kgs and 270 kgs) of lemon in a year.

 

Food historian"s says lemon has been in cultivation around the Mediterranean from as early as the first century AD. High in vitamin C lemon prevents scurvy a disease that cause bleeding gums, loosurie teeth and aching joints. To this day, the British Navy required ships to carry enough lemons so that every sailors can have one ounce of juice a day. During the European Renaissance fashionable ladies used lemon juice in a way to redden their lips. The tangled beige root is used medicinally car be 1-6 inches (2.5 -15 cm) length. The root has a sharp, pungent teast and aroma. Ginger was widely used by the ancient Romans and it was very expensive spice. One pound of ginger was equivalent to the price whole ship. Ginger almost became lost in history after the fall of Roman Empire but became popular again when Europe rediscovered it. Giginer has influenced the history of man since ancient China. War were waged and the entire dynasties rose and fell with the object of seizing. The trade of such a spices was the root of the world"s economy for centuries.

 

  The ginger plant is approximately 30 to 60 cm tall and is extremely rare to find in the whild. Ginger is a herb but is often known as spices with a strong distinct flavour thst can increase the production of saliva. The part that is used as a spice or the plant itself is the rhizomes or ginger root. This ginger root is used traditionally used with sweet food in western cuisines being included in popular recipes such as ginger ale, ginger snape, ginger breads, ginger biscuits and ginger cakes. It is also used in many countries as a medicinal ingredient which many believe in. Some says it can help cure diabetes, , headaches, colds, , fatigues, , nausea and the flu when used in tea or food.

Pepper

   Pepper is often described as the "King of spices" and it shares a place on most dinner tables with salt. The word Pepper originated from the Sanskrit word Pippali meaning berry.    Both black and white pepper comes ftom the shrubs classified as Piper nigrum. Piper nigrum is one of about 1000 species in Piper genus that is the part of the largest family of peppers called Piperaceae. The various species of Piper are grown mostly in woody shrubs , small trees and vines in the tropical and sub tropical region of the world.  The Piper nigrum is a climbing shrub that grows about 30ft (9m) tall through a system of aerial roots but is usually pruned to 12ft (5.66m) in cultivation.  Its flowers are slender dense spikes with about 50 blossoms each. The berry like fruits it produces becomes peppercons, each one is about 0.2 in (5mm) in diameter and contains a single seed. It is indigenous to southern India and Sri Lanka and has been cultivated in other countries with uniformly warm temperature and with moist soil conditions. Because the plant also like shades it is sometimes grown interspersed within coffee and tea plantation. Each plant may produce berries for 40 years.

     The hot taste sensation in pepper comes from a resin called chavicine in the peppercons. Peppercons also are the source of other heat generating substances, including an alkaloid called piperine, which is used to add the pungent effect to brandy and an oil that is distilled from the peppercons for use in meat sauces.

    As a natural medicinal agents black pepper in tea from has been credited for relieving asthma, nausea, fever, migraine, headaches, poor digestion, strep throat and even coma. It has also been used for non -medical applications as sn insecticide.  Of course black pepper is a favourite spice of cooks because of its dark colour and pungent aroma flavours.
